I picked up some Humboldt Fog at Wegman's yesterday. What a great cheese. I generally enjoy the tangy quality of chèvre and this certainly didn't disappoint. It ripens from the outside in and there's quite a difference in both taste and texture between the creamy ripe outside and the drier, more subtle center. I think the key is to get a little of each together. Plus, the vein of edible ash makes it look damn cool. It's a little expensive at $21.50 a pound, but it's going in my top ten.
